The study course creates an in-depth understanding of the structure and chemical variability of the main ingredients of food. A student acquires knowledge of the composition, characteristics and chemical transformations of foodstuffs which take place during processing, recycling and storage. The training workshop is focused on a general understanding of the characteristics of foods and their compatibility.
